Baked brie cheese puff pastry

A package of brie in pastry is dinner waiting to happen. Unwrap it, bake it until the pastry turns golden and the cheese softens into its own sauce, and you have two warm plates in under thirty minutes. Serve with bread to soak up the melted center.

  1. Heat the oven to 400°F [200°C].
  2. Unwrap the brie pastry and set it on a small baking sheet, folding any rough edges underneath so it sits level.
  3. Bake until the pastry is deep golden brown and puffed, about 18 to 20 minutes, watching toward the end so the top does not char.
  4. Let it rest for 2 minutes, then slide onto a cutting board. Dust a pinch of salt across the top.

Note Swap in a drizzle of honey or pepper jelly before serving if you have it. Leftovers keep in the fridge for a day and reheat well in a low oven. Serve with sliced bread, crackers, or a green salad dressed with vinegar.
