Baked enchiladas with black beans and greens

Frozen enchiladas taste better with something fresh stirred in. Here, a garlicky sauté of greens gives body to the mild corn and cheese, and roasting brings colour to what comes from the freezer. This shelf feeds two with little fuss.

Serves 2. 45 minutes, 15 at the stove.

  • 1 package (8 oz) vegan black bean and cheeze enchilada

  • 3 cloves garlic
  • to taste salt

  1. Heat your oven to 375°F [190°C].
  2. Warm 2 tablespoons oil in a wide skillet over medium-high heat, then mince 3 cloves garlic and add to the pan. Once fragrant, after about 30 seconds, add 4 ounces hearty greens, torn into bite-sized pieces, and cook, stirring often, until wilted and any liquid has cooked away, 3 to 4 minutes.
  3. Spread the cooked greens in the bottom of a baking dish just large enough to hold the enchiladas from the package, then lay the frozen enchiladas on top. Cover the baking dish with foil and bake until the enchiladas are heated through and the edges bubble, about 25 minutes.
  4. Remove the foil for the last 5 minutes if you want the tops to brown lightly. Season the greens and the dish with salt and pepper to taste, then serve straight from the baking dish.

Note Swap hearty greens for thin slivers of raw cabbage if that suits your kitchen better. Leftovers keep covered in the refrigerator for two days and reheat gently in a warm oven. Serve with salsa, hot sauce, or lime wedges on the side.
