Boursin scrambled eggs with toast

Creamy scrambled eggs spiked with spicy cheese are dinner when you have five minutes and need something warm. This spreadable cheese does all the seasoning work and adds a luxurious richness to simple eggs.

Serves 2. 8 minutes, 5 at the stove.

  • 3 ounces [85 grams] Boursin gourmet spreadable cheese

  • 6 eggs
  • 1 tablespoon butter
  • 1 pinch salt
  • 1 pinch pepper

  1. Toast 4 slices of bread to golden brown while you work.
  2. Crack 6 eggs into a bowl and whisk until blended, then season with a pinch each of salt and pepper.
  3. Melt 1 tablespoon butter in a nonstick skillet over medium-low heat, pour in the eggs, and stir gently with a spatula every 15 seconds, scraping the curds from the bottom as they set.
  4. When the eggs are mostly set but still glossy, after about 3 minutes, add 3 ounces of Boursin cheese in small spoonfuls and fold it in until melted and fully incorporated, then slide onto plates.

Note Swap the Boursin for plain cream cheese mixed with hot sauce if needed. Leftovers don't keep well; make only what you'll eat now. Serve with the warm toast and a simple green salad or fruit on the side.
