Pumpkin curry with chickpeas and spinach
This African-inspired simmer sauce does the flavoring work for you, so all you do is add protein and greens. The pumpkin and peanuts make it rich and satisfying enough for two on a weeknight, with a little rice to stretch it.

- 1 tablespoon oil
- 2 cloves garlic
- 1 cup cooked rice
- Heat 1 tablespoon oil in a large skillet over medium heat. Mince 2 cloves garlic and add to the oil, stirring until fragrant, about 1 minute.
- Pour the entire jar of pumpkin curry sauce into the skillet. Drain and rinse 1 can chickpeas and add them to the sauce, stirring to combine. Simmer for 8 to 10 minutes until the sauce thickens slightly, stirring occasionally.
- Add 3 cups fresh spinach to the skillet in handfuls, stirring after each addition until the leaves wilt, about 2 to 3 minutes. Taste and adjust seasoning if needed.
- Divide 1 cup cooked rice between two bowls and ladle the curry over the top. Serve at once.
Note Swap the spinach for kale or collards if you have them; add them a minute or two earlier. Leftovers keep for three days in the fridge. Serve with flatbread, lime wedges, or yogurt on the side to cool the spice.
