- Heat your oven to 400°F [200°C]. Pat 4 chicken thighs dry with paper towel and season both sides with salt and pepper. Mince 2 garlic cloves and stir into 1 cup hummus until smooth.
- Rub 1 tablespoon oil over the bottom of a wide baking dish or skillet. Lay the chicken thighs skin side up and spread 2 tablespoons hummus mixture under the skin of each thigh, gently lifting the skin away from the meat. Spread any remaining hummus over the top.
- Roast the chicken uncovered for 30 to 35 minutes, until the skin is browned and an instant-read thermometer reads 165°F [74°C] at the thickest part of the thigh without touching bone.
- While the chicken rests for 5 minutes, wilt 4 ounces fresh greens in a separate skillet over medium heat with a pinch of salt and pepper, stirring often, until tender and any liquid has evaporated.
- Divide the greens between two plates and top each with two chicken thighs. Pour the pan juices over the chicken and serve at once.

Note Swap the canned chickpeas for roasted ones if you have them already made; reduce the roasting time to just warm them through. Leftover roasted chickpeas keep in an airtight container for three days and make a fine snack. Serve with a simple green salad and cucumber slices on the side to stretch this further if you are very hungry.
