Warmed burrito with fresh salsa and greens

A frozen burrito becomes dinner in minutes when you warm it simply and build a plate around it with crisp greens and bright salsa. This shelf makes a satisfying meal for two with almost no hands-on work.

Serves 2. 15 minutes, 5 at the stove.

  • 4 ounces mixed salad greens or spinach
  • 8 ounces fresh tomato or jarred salsa

Staples

  • 1 tablespoon oil
  • to taste salt
  • to taste pepper

  1. Heat 1 tablespoon oil in a skillet over medium-high heat. Once hot, lay the 2 burritos in the pan and cook 3 to 4 minutes on each side until golden and warmed through, turning once halfway.
  2. While the burritos warm, toss the mixed greens with a pinch of salt and pepper in a bowl.
  3. Place one burrito on each plate alongside the greens and serve with salsa spooned over the burrito or on the side for dipping.

Note Swap the greens for roasted vegetables, shredded cabbage, or a grain like quinoa if you prefer. Leftovers keep in the fridge three days; reheat gently in the skillet or oven at 350°F [175°C] for 10 minutes. A lime wedge, avocado, or fresh cilantro stretched this into something more special.
