Amy's Quinoa and Beans with Squash, Warmed and Built

This shelf holds a ready-made bed of quinoa, black beans, butternut squash, and chard that tastes better warm and gains character from quick additions. Tonight you build from there with heat, acid, and texture.

  • 2 ounces feta

  • 1 can or box [420 g] Amy's Light & Lean Quinoa & Black Beans with Butternut Squash & Chard

Staples

  • 1 tablespoon olive oil
  • 2 cloves garlic
  • to taste salt
  • to taste pepper

  1. Heat 1 tablespoon olive oil in a skillet over medium heat and crush 2 garlic cloves into it; cook until fragrant, about one minute.
  2. Empty the entire can of Amy's into the skillet and stir well to combine and warm through, about five minutes, breaking up any larger pieces of squash as you go.
  3. Taste and add salt and pepper to your liking, then transfer to two bowls or plates.
  4. Squeeze the juice of half a lime over each bowl and crumble one ounce of feta on top of each; serve at once.

Note Swap the feta for a fried egg for protein and richness. Leftovers keep three days covered in the fridge and warm well in a skillet. Serve with warm bread or with raw vegetables on the side for crunch.
